It drives us batty when ice cream shops post prices for a pint, which is a volume measurement, but weigh the ice cream on a scale as if it’s a weight measurement.

Volume and weight are different! Rant over.

HOW DO I SCOOP HARD ICE CREAM?

There are a couple of methods for scooping hard ice cream. First, you can allow the ice cream to sit at room temperature for 15-20 minutes before scooping. Cuisinart Ice Cream Maker Recipes

Yield: 6

Prep Time: 15 minutes

Cook Time: 25 minutes

Additional Time: 4 hours

Total Time: 4 hours 40 minutes

Ice cream base for Cuisinart Ice Cream Maker Recipes. We like to use this ice cream recipe as a base, and add our favorite add-ins to mix up the flavors.

Ingredients

  • 4 large egg yolks
  • ½ cup granulated sugar
  • 1 ½ cups whole milk
  • 1 ½ cups heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Chill the Cuisinart ice cream bowl for at least 24 hours or until solid. You should not hear any water sloshing around when you shake the bowl.
  2. In a medium bowl, whisk together the egg yolks and granulated sugar until smooth and pale yellow in color.
  3. Add the milk to a saucepan over medium heat. Bring the milk to a simmer and then remove from the heat. Be sure not to boil.
  4. Add about ½ cup of the hot milk to the egg and sugar mixture and whisk constantly until combined.
Then, add the tempered egg mixture back into the saucepan with the remaining hot milk.
  5. Heat the saucepan on low. Stirring constantly, heat until the base has thickened enough to coat the back of a spoon. This should take a few minutes.
  6. Strain the mixture into a bowl to remove any pieces of egg that may have cooked.
  7. Add the heavy cream and vanilla extract and stir to combine.
  8. Cover the bowl with plastic wrap making sure to have the plastic wrap touching the surface of the ice cream base. This will help keep it from forming a skin while chilling. Refrigerate for at least 3 hours.
  9. Churn the ice cream mixture in the bowl of your ice cream machine according to the Cuisinart manufacturer’s instructions (mine took about 20 minutes), until it is thick and the consistency of soft-serve ice cream.
  10. In the last two minutes, add your add-ins and flavors, and churn until they are evenly distributed.
  11. Spoon the ice cream into a shallow container or a loaf pan. Press plastic wrap or wax paper to the surface of the ice cream. Freeze for at least 4 hours, or until solid. Let sit at room temperature for about 5 minutes before serving.

Notes

Use quality ingredients –When making homemade ice cream, you’ll want to make sure you are using high quality ingredients for the best outcome.

Chill out –If possible, always start with chilled ingredients. This is important for homemade no-churn ice cream recipes and ice cream maker recipes.

Don’t skimp on the fat –High fat milks and creams are essential when making homemade ice cream. Opting for a low-fat option often leads to icy ice creams and inconsistency in the texture.

Don’t go crazy with the add-ins –If you’re adding in additional ingredients, pick one or two and make sure they are chopped into small pieces.

Don’t skimp on the sugar –Sugar not only adds sweetness to homemade ice creams, it also helps with the texture. Sugar is essential for the creamy texture in ice cream.

FAQs

How long should I churn ice cream in my Cuisinart ice cream maker? ›

Turn the Cuisinart® ice cream maker on; pour the mixture into the frozen freezer bowl and let mix until thickened, about 15 to 20 minutes. The ice cream will have a soft, creamy texture.

How to make homemade ice cream creamy and not icy? ›

So you can up the fat in your ice cream by substituting cream for milk or half-and-half in recipes. Even more effective, is that you can also add more egg yolks if making a custard-based ice cream, which will increase the creaminess due to their emulsifying properties.

How to prevent ice crystals in homemade ice cream? ›

Chill Your Base Well

The initial mixture should be very cold before it hits the ice-cream machine; ideally, you'll want to refrigerate it overnight. It'll need less churning time this way, and that will keep ice crystals from snowballing.

Why is my ice cream not thickening in my Cuisinart ice cream maker? ›

Your bowl must be 100% frozen solid. Give it a shake and if you hear any slushing of the liquid inside the walls of the bowl, it's not ready to use yet. If your bowl isn't totally frozen, your ice cream won't thicken and churn but remain soupy instead.

How do you know when ice cream is churned enough? ›

Churn just until the ice cream is thick, and about the consistency of soft serve, then transfer to another container and store in the freezer.

What happens if you churn ice cream too long? ›

Here's why: Churning ice cream base is a bit like making whipped cream. You need to churn just enough to make the fat globules stick to the air bubbles and form a protective coating that stabilizes the foam. But too much churning can cause the fat globules to stick to each other, turning the mixture into butter.

What is the secret to making ice cream very creamy? ›

As you churn ice cream, individual water molecules turn into ice-crystal seeds — which is what makes cream freeze. The higher the fat content, the more time you have to churn before these ice crystals congregate, resulting in creamier final texture.

What not to do when making ice cream? ›

You made ice cream! We're sure you can't wait to dig in, but a little patience and prudence is a must here. Many people over mix the ice cream, attempting to freeze it and get it super-chilled right in the machine. This is a big "don't," as overmixing will cause the ice cream to turn, well, icy.

What ingredient keeps homemade ice cream soft? ›

Sugar, corn syrup or honey, as well as gelatin and commercial stabilizers, can all keep your ice cream at a softer consistency. Ice cream also stays softer when you store it in a shallow container, rather than a deep tub, and cover the surface of the ice cream with plastic wrap to keep ice crystals from forming.

Why do you add rock salt to ice when making ice cream? ›

The greater the salt content, the lower the freezing point of the water. At the same time, dissolving salt in the liquid water causes the water temperature to drop, generating ice cream quicker.

Why is my homemade ice cream so hard? ›

My ice cream is too hard

Homemade ice cream usually contains much less air than the stuff you buy in the store. Air keeps ice cream soft. So the less there is, the harder your ice cream. It can also be caused by low fat or sugar content.

What is a natural stabilizer for ice cream? ›

Stabilizers, including natural, plant-derived ingredients like guar gum, xantham gum, and carageenan, are just another kind of emulsifier that manipulates ice cream texture. (And FYI, egg yolks are a kind of stabilizer.)

How to use the Cuisinart ice cream maker? ›

Turn on the Cuisinart® ice cream maker; pour the mixture into the frozen freezer bowl and let mix until thickened, about 20 minutes. The ice cream will have a soft, creamy texture. If a firmer consistency is desired, transfer the ice cream to an airtight container and place in freezer for about 2 hours.

What is the best thickener for homemade ice cream? ›

Adding thickening agents, such as egg yolks, cornstarch, gelatin, tapioca starch, or even Junket tablets, enhances the texture and elevates the overall ice cream experience. Remember, making homemade ice cream is as much an art as it is a science.

How much liquid can you put in Cuisinart ice cream maker? ›

But the machine will add a fair amount of air to the mixture, so you can't put a full 1.5 quarts of liquid in there or the ice cream will overflow out of the bowl. So stick to good recipes that ask for 3 cups (or less than a litre) of liquid, pre-chill the mixture and you should be OK.

How do you know when the ice cream is ready in a Cuisinart ice cream maker?

What is the minimum time to freeze a Cuisinart ice cream maker? ›

For the most convenient frozen desserts and drinks, leave your freezer bowl in the freezer at all times. You can take it out any time for immediate use. In general, freezing time is between 6 hours and 22 hours. To determine whether the bowl is completely frozen, shake it.

How long does it take to churn Cuisinart ice 21? ›

The ICE-21 is a frozen-bowl model, so you need to pre-freeze the bowl overnight before churning. And though that requires some preparation and patience, once the bowl's ready, this machine churns out ice cream faster than our other picks—it reaches soft-serve consistency in about 18 minutes.
